Here's what my table looks like when I'm preparing to make my cookie trays. Actually, I'm not quite done with my Christmas baking, but I was packing a box to send to my daughter for her party. Some of these are quite simple to make, others quite difficult. Starting at the top, from left to right:
- Venetians aka Tricolors: made by baking 3 almond paste layer cakes, put together with jam between, sliced into bars, covered with chocolate, sliced into cookies
- Black & Whites
- Almond Paste Crescents: very easy but you'll need a pastry bag and large star tube

- Rum Balls - easy and no baking
- Jamwiches
- Date Raisin Rolls
- Rugelach
3 rd row down
- Black & White Pretzels
- Cinnamon Rolls
- Mocha Rum Buttercream Sticks: each cookie has to be made individually on a Krumkake Iron and rolled quickly around a dowel while still hot
- Apricot Torte Bars: very easy
- Ginger Rum Biscuits: look just like happy little wreaths with their sprinkiling of multicolored sugar

- Molasses Raisin Cookies: forget the mixer. This dough is so stiff you have to do it by hand, but it's surprisingly easy to work with after the dough is made. Huge recipe ==> 180 cookies
- Cherry cookies
- Vanilla Meringue Flutes
- Shells: Dipped in melted chocolate and rainbow sprinkles
I have to start my baking before Thanksgiving (which means we have some cookies for Thanksgiving along with all the pies my wife makes). I store it all in my upright freezer until I make the trays. Can't do it all at once. I still work full time between trips to the urologists and the loo. ;D
