    1 hour to make 90 cookies. So colorful & easy. All you need besides standard ingredients is a cookie gun or press and glace cherries.

    Cherry Cookies

    Ingredients: 1 cup butter ¾ cup sugar 3 large egg yolks 1 tsp vanilla 2¾ cups flour Glace Cherries

    Directions: Cream butter. Cream in sugar. Beat in egg yolks and vanilla. Mix in flour. Place on cookie sheets with  a cookie GUN or PRESS. Put cherries in the center of each cookie. Bake 7-10 minutes at 400°F. or until light golden around edges.

    I want everyone to know, that I have finally given in and made the co-workers the jalapeno cornbread today. I am catching the wafts coming from the kitchen and it smells really good.

    This cornbread was a big topic of conversation yesterday. The coworkers feel that they are being punished because I’m not bringing this to them for our monthly birthday’s get together…

    I’m so mean… :P

    I live in the Berkshires of Western Ma. in Great Barrington there is a place called the Barrington Brewery they have this cake. When I found the chiefs recipe online I was estatic. My niece now serves it at her two resturants in the Nashville area. It is a job to creat but will get you raves. So my gift to you all is the visually most impressive,best tasting chocolate cake I have ever ran across.

    Chocolate Stout Cake

    IngredientsCake
    2 cups stout (such as Guinness)
    2 cups (4 sticks) unsalted butter
    1 1/2 cups unsweetened cocoa powder (preferably Dutch-process)
    4 cups all purpose flour
    4 cups sugar
    1 tablespoon baking soda
    1 1/2 teaspoons salt
    4 large eggs
    1 1/3 cups sour cream

    Icing
    2 cups whipping cream
    1 pound bittersweet (not unsweetened) or semisweet chocolate, chopped

    Preparation for cake:
    Preheat oven to 350°F. Butter three 8-inch round cake pans with 2-inch-high sides. Line with parchment paper. Butter paper. Bring 2 cups stout and 2 cups butter to simmer in heavy large saucepan over medium heat. Add cocoa powder and whisk until mixture is smooth. Cool slightly.
    Whisk flour, sugar, baking soda, and 1 1/2 teaspoons salt in large bowl to blend. Using electric mixer, beat eggs and sour cream in another large bowl to blend. Add stout-chocolate mixture to egg mixture and beat just to combine. Add flour mixture and beat briefly on slow speed. Using rubber spatula, fold batter until completely combined. Divide batter equally among prepared pans. Bake cakes until tester inserted into center of cakes comes out clean, about 35 minutes. Transfer cakes to rack; cool 10 minutes. Turn cakes out onto rack and cool completely.

    For icing:
    Bring cream to simmer in heavy medium saucepan. Remove from heat. Add chopped chocolate and whisk until melted and smooth. Refrigerate until icing is spreadable, stirring frequently, about 2 hours.

    Place 1 cake layer on plate. Spread 2/3 cup icing over. Top with second cake layer. Spread 2/3 cup icing over. Top with third cake layer. Spread remaining icing over top and sides of cake.

    I do so enjoy being in the kitchen don’t you? There is something so relaxing about being up to you elbows in flour….And the results are so satisfying (and wonderfully fattening)! I exercise all year to be able to enjoy the holidays! I always gain 5-10 lbs but it is worth every mile I run in Jan.! I eat straight through from Halloween Candy to Mimosa’s on New Years Day. Its great because I never take off my apron during the Holidays either (I LOVE Aprons) , so no one can tell when I have to loosen a button…LOL

    Thanks a bunch, Warren. I’m going to make these RUM BALLS and take them to work. I hope that they don’t make us too happy!!!!

    Rum Balls are my favorite Christmas desert!

    For you Rosemary
    Rum Balls
    Ingredients:
    2½ cups vanilla wafer crumbs (½ lb.)
    ¼ cup light corn syrup
    ¼ cup rum
    2 tbsp. cocoa
    1 cup pecans
    Confectioner’s sugar

    Directions:
    Blender crumb wafers
    Blender chop nuts
    Mix in cocoa, corn syrup, and rum
    Roll into balls
    Refrigerate
    Roll in confectioner’s sugar

    This recipe came from my first blender’s instruction book. I’m more inclined to use a food processor for turning the cookies into crumbs and chopping the nuts. I use a small melon scoop to grab a piece of dough for each cookie, roll it between my palms to make a round ball, and refrigerate on wax paper in a jelly roll pan (a cookie sheet with sides will do. I just don’t want them rolling off the tray on the way to the refrigerator ;)).

    I loved the cookie shots. My 94 year old father-in-law is a retired baker (also a three time bladder cancer survivor)…to this day, he makes masses of cookies every Christmas. I feel exhausted just watching.
